Tasting Note
Blood red colour, complex nose of red fruits this wine has a purple colour, with a complex nose of red fruits, spices, structured mouth with supple and silky tannins; racy, it can be forgotten for about ten years.
Food and wine pairing
It pairs well with stewed meat, stew and cheese.
Soils
The fairly deep soil on the eastern side is tailor-made for this native varietal, the Mondeuse.
Vinification
Through ageing in barrels for several months, I sought a balance between aromatic complexity and the grape's structure.
